Just Plain Yummy Blonde Fudge
1 stick (4 oz) butter or margarine
3 cups sugar
7 oz evaporated milk
1/2 cup light corn syrup
1 tsp vanilla
1/2 cup chopped nuts (optional, but I used walnuts and it was delicious).
1. Line an 8x8 pan with aluminum foil and coat with nonstick spray.
2. Place the butter in a medium-large saucepan over medium-high heat. Melt the butter, stirring occasionally, and continue to cook it until it is a rich, golden brown. Monitor the butter as it cooks and stir it every few minutes so that it does not scorch on the bottom. The butter should smell rich and toasty and have a lovely brownish nutty color.
3. Once the butter is browned, add the sugar, evaporated milk, and corn syrup. Stir until sugar dissolves, then clip a candy thermometer to the pan side being careful not to let the tip of it touch the bottom of the pan.
4. Cook mixture until it reaches 235 degrees (soft-ball stage).
5. When temperature is reached, remove from the heat and allow to cool at room temperature until lukewarm, about 45 minutes.
6. Once the candy is barely warm to the touch, beat until thick and creamy, and loses its shine. Don't overdo, though, or the fudge will be grainy.
7. Quickly stir in the vanilla, and the nuts, if using.
8. Pour and scrape the fudge into the prepared pan, and smooth into an even layer. Allow to set up at room temperature or in the fridge. Once set, cut into small squares and serve at room temperature. Store remaining fudge in an airtight container or bag at room temperature for up to a week, or refrigerated for 2-3 weeks.
